		<description><![CDATA[In the coffee world, &#8220;acidity&#8221; refers to a flavor note, not to the actual acid content; coffee is relatively low in acid. Its pH averages around 5.0 &#8211; 5.1, which is more neutral than beer or any fruit juice and similar to carbonated water (which contains carbonic acid as a result of the dissolved carbon dioxide). Acidity, as a flavor note, is the bright and dry taste that adds life to the coffee.  Acidity is akin to the dry but bright sensation experienced on the back sides of your tongue while drinking a red wine. Acidity is unmistakable in most Kenyan coffees and should be evident in any wet-processed coffees.  Dry-processed coffees will have a low-toned and subtle acidity. Once a year the Maryland Department of Agriculture comes to the Mayorga Coffee roasting facility to perform an inspection of our Organic program.  The inspector works with our Operations team to follow every pound of Organic coffee as it arrives to our warehouse and is roasted, packaged, and shipped to our customers.   These inspectors ensure that every bag of Mayorga Coffee that is labelled as Organic, is 100% Organic. Mayorga Coffee is committed to selling organic certified coffee because it encourages coffee farms to eliminate any harmful chemicals and pesticides from their soil, which is the source of their livelihood and an integral part of their ecosystem.  It also promotes the use of renewable resources, soil and water conservation, and will generally restore the environment for future generations. Mayorga Coffee sells its 100% organic certified Café Cubano at Costco Wholesale locations throughout the East coast as well as at Giant Foods, Stop &#38; Shop, Total Wine, Whole Foods, and multiple East coast outlets.
