What makes Mayorga Coffee taste so good?

Mayorga coffees are all sourced from the highest-quality shade-grown coffea arabica trees, and cultivated within each region’s most dedicated farms and cooperatives.

We take great care in crafting our signature blends and uncovering the roast styles that most fully express the true nature of our beans; each day, we cup our freshly roasted coffees to ensure consistency and adherence to the ideal profile we’ve determined.

Instead of keeping large inventories of roasted beans as is the norm in the coffee industry, we always roast to order to help ensure the shortest period of time between the day the beans are roasted, and the day they are brewed for consumption.

Tastes by Geographic Origin

Much of a coffee’s taste and characteristics can be attributed to the region where it is grown.  Coffee identified by its growing region is called varietal.  If two or more varietals are combined, we call the resulting mixture a blend.  Even if you have never tried a particular coffee before, you can learn a lot about it based upon its origin.  Although there are many different varietal from all over the world, coffee can be broken down into three major geographic families:

African

Coffees from this growing region are the most distinctive in the world, characterized by dry, winy acidity, chocolate and fruit undertones, rustic flavors and intense aromas. Ethiopia is the native land of coffee, and it was in Yemen that coffee was first cultivated and prepared. Coffee nations in this region include Ethiopia, Kenya, Tanzania, and Cameroon.

Indonesian and the Pacific

This region of the world tends to have coffee that is full to heavy bodied, smooth, syrupy, low in acidity, and is sometimes spicy or winey.  Coffee nations in this region include Yemen, India, Sumatra, Java, Sulawesi, & Papua New Guinea, and Hawaii.

Latin America & The Caribbean

The coffees produced in this growing region are distinguished by their light body, simplicity and sharp acidity. They are typically thought of as having bright flavors with a clean, crisp finish.  Coffee nations in this region include Brazil, Colombia, Peru, Panama, El Salvador, Costa Rica, Guatemala, Nicaragua, Mexico, and Jamaica.
